How do I know which stage a deal is at?
It's set by the in-progress club at the most advanced stage. Rejected clubs don't count.

Yes. Steps with a date go into your calendar as a to-do or a meeting.
What if a rejected club becomes interested again?
Change its status from rejected to in progress and it stays in the deal. If you delete a deal, it's gone for good.
